Fallbrook, CA - In June of 2007, Pedro Gallardo acquired 20 acres of lush farmland in Fallbrook of San Diego County and fulfilled a dream to establish his own organic ranch. In Southern California, Pedro’s farm resides in a hot and humid valley known as, 'The Avocado Capital of the World' which bathes in the moisture of the Pacific Ocean. This provides the perfect subtropical weather conditions and temperament for the growth of high-quality exotic crops and premium-grade citrus all year round. In order to ensure his customers receive the freshest and highest quality produce, Pedro’s Organic Ranch proudly maintains a pesticide free and chemical free environment.

A purveyor of alluring tropical produce, Pedro grows avocados, passion fruit, dragon fruit, guavas, mulberries, and much more. This year, our staff was honored with an opportunity to visit Pedro’s Organic Ranch and see his amazing work, firsthand. Throughout our immersive tour, Pedro Gallardo displayed his farm’s wide variety of organic fruit and the comprehensive manner in which he tends to their needs. He even gave us a chance to try the illusive ice cream bean fruit, right off of the branch! Everyone thinks of guacamole, but what about an avocado margarita? Yup. Blend avocados into your favorite smoothies or cocktails for some plant-based creaminess. Or try baked avocados with an egg in the center, topped with cheddar. Yeah, it's delicious. But we know that avocados are hard to get just ripe. Unripe avocados can take 4-5 days to ripen at room temperature. If you want to speed up the process, try leaving it in the paper bag with an apple. This should cut the ripe time in half. If it's already ripe and you want to prolong its life you can toss it in the fridge. A ripe avocado that hasn't been cut open can be stored unwrapped in the fridge for two to three days. If you have cut open your avocado and found it to be unripe, sprinkle the exposed flesh of the avocado with citrus juice, place the two halves back together with pit, and store in an airtight jar in the refrigerator. Try adding a shallot or onion into the jar with the opened avocado... it helps prevent discoloration!
